Eggs are a great source of meatless protein. They are very versatile and more than just a breakfast food. Don't get me wrong, breakfast is great but it's not what I want to eat at every meal. In our house we use eggs a lot in Asian dishes but they are great in so much more!
Try making Huevos Rancheros if you enjoy Hispanic dishes or try an over easy or over medium egg with a nice runny yolk over roasted potatos or pasta. (The yolk makes a nice sauce.) Add scrambled eggs to your favorite stir fry. Try a soft boiled egg to ramen or Asian noodles.
If none of these dishes sound appealing then there's always breakfast!
